Ingredients

Salmon:

4 filets wild-caught salmon, skin-on
1 teaspoon sea salt
1/2 teaspoon organic black pepper, ground
2 tablespoons organic olive oil

Guacamole:

2 organic avocados, ripe
1/2 organic red onion, chopped
1 organic lime, juiced
1 tablespoon organic olive oil
1 teaspoon sea salt
1/2 teaspoon organic black pepper, ground

Instructions

  1. Preheat oven to 425 F.
  2. Rub salmon with olive oil liberally on both sides.
  3. Season salmon with salt and pepper.
  4. Line a baking sheet with parchment paper.
  5. Place salmon, skin-side-down, on the baking tray.
  6. Put tray in the oven and bake for 15 minutes.
  7. As salmon is baking, combine guacamole ingredients in a large bowl.
  8. Mash together guacamole ingredients until it reaches desired consistency.
  9. Once salmon is finished cooking, remove from oven.
  10. Distribute salmon fillets on 4 plates and top with guacamole.
  11. Serve and enjoy!
