INGREDIENTS
2 organic zucchinis, peeled and shredded
3/4 cup organic parmesan cheese, grated
1/4 cup organic blanched almond flour
2 organic eggs
2-3 tablespoons grass-fed ghee
1 teaspoon sea salt
1/2 teaspoon black pepper
INSTRUCTIONS
- Peel your zucchini, chop in half long ways, and scoop out the seeds.
- Grate the peeled zucchini in to a large thin washcloth or cheesecloth.
- Squeeze to remove as much water as possible.
- In a large bowl, combine the zucchini with the remaining ingredients and mix until well combined.
- Allow mixture to se for 5 to 10 minutes before continuing.
- Add 1 tablespoon of ghee to a frying pan over medium heat.
- Once ghee has melted, scoop a heaping tablespoon of fritter batter on to the pan.
- Gently push to flatten the fritter.
- Add as many fritters on to your pan as will easily fit.
After about 3 minutes begin to check the underside of the fritters using a spatula. - Once the fritters are golden brown flip and cook for another 3-4 minutes on the second side until golden brown.
- Remove fritters from the pan and set aside on a plate covered in a layer of paper towels.
- Serve immediately.
- Enjoy!
