Ingredients
Salmon:
4 fillets wild-caught salmon, skin-on
1 teaspoon sea salt
1/2 teaspoon organic black pepper, ground
2 tablespoons organic olive oil
Guacamole:
2 organic avocados, ripe
1/2 organic red onion, chopped
1 organic lime, juiced
1 tablespoon organic olive oil
1 teaspoon sea salt
1/2 teaspoon organic black pepper, ground
Instructions
- Preheat oven to 425°F.
- Rub salmon with olive oil liberally on both sides.
- Season salmon with salt and pepper.
- Line a baking sheet with parchment paper.
- Place salmon, skin-side-down, on the baking tray.
- Put tray in the oven and bake for 15 minutes.
- As salmon is baking, combine guacamole ingredients in a large bowl.
- Mash together guacamole ingredients until it reaches desired consistency.
- Once salmon is finished cooking, remove from oven.
- Distribute salmon fillets on 4 plates and top with guacamole.
- Serve and enjoy!
