This quick and easy blueberry mousse is loaded with both flavor and nutrition.
Fresh blueberries are a great source for antioxidant polyphenols. Antioxidants help scavenge free-radicals and lower inflammation.

Ingredients
2 cups organic heavy whipping cream
1/2 cup organic blueberries
1/2 teaspoon organic lemon zest
1/4 teaspoon organic vanilla extract
Instructions
- In a large mixing bowl, whip the cream until soft peaks begin to form.
- Add in lemon zest and blueberries and continue to whip until well combined.
- Cover the mousse and place in the refrigerator for 3-4 hours or until firm.
- Serve and enjoy!

Hi Dr Colbert, I recently purchased your book The keto Zone diet and I saw your interview on TBN with pastor Robertson. And unfortunately I’m one of those people that have been recently diagnosed with diabetes and high blood pressure at 48 years old. I’ve been praying and truly asking God for help because I don’t want to be bound by these diseases. My mother just recently had to have her left leg amputated due to complications with diabetes and gangrene and I don’t want that to be my fate. I want to be healthy and whole. I am a hundred pounds overweight and my issue is being able to afford the foods and supplements on the keto diet I sustained injuries due to a fall on my job and I lozt my job, which now limits my income and it’s a challenge to afford organic or healthier choices so it seems . For example I recently read that recipe for the blueberry mousse I noticed that all of your ingredients are organic. My question is if we don’t use organic food, how does it affect the recipe and the ability for us to lose the weight and stay in the keto Zone efficiently? I really want to try this new way of eating and I’d love to have more recipes that’s been my prayer but I don’t want to feel stressed out or frustrated because I can’t afford certain ingredients I have a family of five and they’re all willing to go on this journey with me but I want to be consistent and I want to see this through to the end a hundred pounds lighter . Can you help me?
