This delicious almond butter cookie recipe is a great low-carb alternative to peanut butter cookies!

Ingredients
2 tablespoons blanched almond flour
1/4 cup keto-friendly sweetener (erythritol works well)
1 cup almond butter
1/4 cup grass-fed butter softened
2 organic/pasture-raised eggs
1/4 teaspoon sea salt
Instructions
- Preheat oven to 350 F.
- In a larg mixing bowl, combin all ingredients.
- Use a hand mixer to mix until a dough forms.
- Line 2 baking sheets with parchment paper.
- Divide dough in to 24 equal sized balls and arrange 12 on each baking sheet.
- Use a fork to flatten each ball horizontally and vertically leaving fork marks in the cookie.
- Place cookies in oven and bake for 12 minutes or until golden brown.
- Remove from oven and allow to cool for about 5 minutes.
- Serve and enjoy!

I was just thinking about peanut butter cookies for holidays. And saw this recipe. So I of course I had to try it. I made them & was so pleased to have a healthy cookie. The cookie was delicious, it wasn’t as pretty as the picture but none the less very delicious. I will be using this recipe along with the ginger Keto cookie. Mine did not turn out as pictured they were swimming in a pool of oil😐could something be wrong with my almond butter? Or could the 2 tbls of flour be a typo and should be more than that?
I also made these Almond Butter Cookies. There must be a typo on the amount of Almond flour. Because, I had a mess. I think I will add 2 cups of Almond flour.
Add about 3 more tablespoons of almond flour. My came out great!
